Zucchini Pappardelle
1 Lb. Zucchini, washed and dried 2 lbs. Tomatoes, washed, dried and diced into 1/2 inch Dice 2 tsp. Extra Virgin Olive Oil 1 tsp. Spike Garlic Magic 1 tsp. spike 5 herb magic 1/2 tsp spike original magic 1 tsp. grated Parmesan Chesse *
Heat oil in saucepan over medium heat for 30 seconds, add tomatoes, garlic, herbs and spices. Cook on medium for 10 minutes while: Slice zucchini in very thin strips (vertically) - this is easiest to do with a vegetable slicer or mandoline. When sauce is hot and bubbling, add zucchini slices and cook until tender. Serve with a light sprinkling (1/2 tsp. per serving) of Parmesan. 2 Servings.
